This is a simple cupcakes recipe. Arrange your childs favourite sweeties and icing on top for the perfect finish.This recipe makes 14-16 delicious cupcakes.
- 125g/41/2oz plain flour
- 125g/41/2oz unsalted butter
- 125g/41/2oz caster sugar
- 1tsp baking powder
- 2 eggs, beaten
- 85g/3oz strawberry jam
For the icing:
- 350g/12oz icing sugar, sifted
- Fresh lemon juice
- Edible food colouring
- Edible cake decorations
Put 14 to 16 paper cases into bun tins. Sift together the flour and baking powder and set aside. Preheat the oven to Gas 4/180°C/350°F.
Cream the butter and sugar until pale and light in a mixing bowl. Gradually beat in the eggs, followed by the jam. Slowly beat in the flour mixture until smooth.
Spoon into the paper cases and bake for about 20 minutess or until golden. Turn out on to a wire rack and leave to cool.
Tip the icing sugar into a bowl and add enough fresh lemon juice to make a thick icing. Add colouring if you fancy and spoon the icing over the cakes. Arrange edible decorations on top such as Smarties, jelly tots or chocolate chips.
